Mix the sample of milk well. Pour it into a dry cylinder which enables the lactometer to float without touching the sides.
Let the lactometer into the cylinder. Take the reading from the lactometer as soon as it becomes stationary.
Note the corrected lactometer reading ( CLR ).

According to the two-axis pricing policy, the price of milk is calculated by fixing a pre-determined rate for fat and solids-not- fat. Resazurin test is the most widely used test for hygiene and the potential keeping quality of raw milk. Resazurin is a dye indicator. Under specified conditions Resazurin is dissolved in distilled boiled water. The Resazurin solution can later be used to test the microbial activity in a given milk sample.
Solids Not Fat ( SNF ) consists of everything except milk fat and water. That means total solids content in the entire residue left after complete evaporation of water from milk. This includes fat protein, lactose and mineral matter. Normally cow milk contains 8.5% SNF whereas buffalo milk contains 9.0% SNF.

The quevenne lactometer – designed to determine the specific gravity of milk at 15.5ºC (60ºF). Zeal Lactometer – designed to determine the specific gravity of milk at 29º C at 84º C. The Watson lactometer – is applied at a temperature of 39ºC. ISI lactometer calibrated at 27ºC is used.
The pH of normal, fresh, sweet milk usually varies from 6.4 to 6.6 for cow milk and 6.7 to 6.8 for buffalo milk. Higher pH values for fresh milk indicate udder infection (mastitis) and lower values, bacterial action.
For calculation of kg fat / kg SNF, the milk volume is to be multiplied by specific gravity and the weight thus arrived is multiplied by fat or SNF % and then divided by 100. However, under the Anand Pattern, farmers are paid on volume and the DCS is paid on weight basis.
